Yes, I admit, it has been a while! I certainly haven’t been procrastinating but well, life just got a little busier than usual so I had to focus more on the ‘must do’s while putting the ‘I want to do’s on the backburner for a bit. That was probably the biggest lesson I had to learn: that it’s okay if I can’t do everything that I want to. With a finite number of hours in a day, there’s a limit to what I can do without losing who I am.

Can you tell I’m a bit of a perfectionist? That’s part of the reason why I post the way I do for – to intentionally post spontaneously with minimal edits to the written dialogue so that it can be as authentic as possible.  It’s been a while but hopefully I’ll be able to post a bit more often now that things are cooling off a bit. I actually have time to do this little mishmash post. 

Priority on my list right now – thank you gifts for the teachers (aside from buying sunscreen which I managed to pick up recently!). The school year is coming to an end so our family has been putting together gifts for all those teachers who make a difference in our big kid’s life, teachers who empower children to be the best they can be, who encourage them to think big and make discoveries, and give them the confidence to do so. Sure, there is content that must be taught within the umpteen textbooks but HOW the teachers choose to teach – that’s where the magic happens. pic - kids 2015

This post is dedicated to all those teachers out there who go the extra mile, who instill magic and wonder and breathe life into the words and numbers buried in texts. You are the ones who spark children’s will and motivation to learn and you are the ones who make this world such a beautiful and magical place.

On another completely unrelated food note, my latest craze: chickpeas, tomatoes, and cucumbers. pic - chickpea tomato cucumber salad

With the hot summer days in full swing, there are times I crave a hearty and satisfying salad. You see, I’m not great with salads. I’m incredibly boring and tend to rely on the same few ingredients: rice wine vinegar, honey, balsamic vinegar, olive oil, in various combinations. For extra flare, I might even throw in some dried oregano but that’s about as adventurous as I get.

Allow me to introduce you to my latest discovery: mustard, no, not the bright yellow kind but a fun honey lime mustard that I found in my local grocery store. I had an ‘aha’ moment and envisioned that mustard paired with the rice wine vinegar and honey so I took it home and sure enough – awesome! Splashed with some chickpeas I’d cooked up (not from a can – that stuff creeps me out), sliced grape tomatoes, and some cubed cucumbers and voila! Lesson learned: favourites are great but it’s nice to branch out a bit sometimes and make new discoveries! I wonder what other new discoveries my family will make this year?
