With the hot summer months came really hot muggy weather and I don’t know about you but I certainly didn’t feel like cooking in that kind of humidity.
The brain turned into mush and all I could think about was escape. My stomach however still wanted food so my brain had to quickly think of a decent alternative (because I’m also tired of take out).
I had tomatoes, cucumbers, feta cheese, quinoa, and pasta. It seemed like the perfect summer dinner. With a splash of balsamic vinegar and a few other choice ingredients (hello, olive oil), dinner was on the table and it was a HIT.
It’s times like these I’m reminded that ‘less is more’. I didn’t need a big giant gourmet meal. I didn’t need a lavish 12 course sampler. All I really wanted was a refreshing salad made with delicious simple ingredients. It took no time to throw together and even less time for the entire family to plow through without feeling gross and disgusting afterwards. I also didn’t have to spend gallons of money on this pasta salad (you know, take out costs more than you think!) and there was even enough for my lunch the next day.
I should have thought of this a lot sooner!
Now, I don’t really have a recipe to share because quite frankly, I just threw a bunch of stuff together and hoped for the best. Olive oil and balsamic vinegar definitely played a part and I may have added a pinch of salt and pepper to round out the flavours.
So, if you’re having a really hot and muggy summer try making your own pasta salad. Surprise yourself. Throw in some quinoa, maybe some barley or buckwheat, or add a few seeds into the mix. You may end up with the best tasting salad ever!
