Just because it’s getting cooler outside doesn’t mean you can’t treat yourself to an ice cold treat from the freezer.

Ice cream, anyone?

Of course, if you’re going to have a scoop of ice cream in cooler weather, you might as well make it super special by adding a ton of other goodies on top.

As luck would have it, we had some vanilla ice cream in the freezer and a bunch of other random treats lying around at home. I had a few squares of my no bake chocolate treats in the fridge so I decided to cut them into sticks. There was some leftover toasted coconut with sunflower seeds and some crushed butter cookie bits lying around just begging to be used. Of course, we also had a few mini marshmallows sadly dragging along so we used those too. pic - ice cream in cooler weather

Next thing you know, we’ve got an ice cold treat worthy of an award. The vanilla ice cream was the perfect backdrop for all those random leftover odds and ends. The no bake chocolate treats added a great chewy texture to the mix while the toasted coconut, sunflower seeds, and crushed cookie bits gave it that crunch that I love. Now, only my big kid added marshmallows to her bowl but she was definitely grinning from ear to ear.

Lesson learned: never ever discard those random edible bits and pieces. You never know when they’ll come in handy. I think it’s been a long time since I’ve had ice cream that tasty! pic - ice cream in cooler weather
