Whenever possible, our family tries to eat healthy. Flax factors into our family’s equation. Sometimes we have flax in our bread, sometimes we toast it up and add it as a topping to our meals.

Well, today we’re enjoying flax with some toasted coconut and cane sugar. It may look like a simple mix but boy is it versatile. Over the past few days, we’ve used our little tasty concoction on top of homemade rice pudding, rice, pasta, grilled chicken, yogurt, and then some. My kid loves this particular mix and so do I. I don’t use a lot of cane sugar, just enough to add a slight hint of sweetness.

Ask me a few years ago and I would have never thought of making this toasted flax and cococut mix. Now, it’s an easy way to jazz up meals and snacks. Make your own yummy mix with a few choice seeds and grains. Why not?

A few weeks ago, I did a review on the Cocovie coconut jam. At the time, I loved it but with the temperature fluctuations, my lovely Cocovie coconut jam separated leaving its coconut oil goodness floating on the top and rendering me helpless.

At that time, the lovely folks at Cocovie told me I could combine the two again once the weather warms up a bit and it would be back to its original glory. Well, I am happy to give you all an update on my Cocovie coconut jam.

I’m not a huge makeup fan. Sure, I wear it but I’m not one to stay loyal to a product just because it has a big name. You certainly won’t see me sporting a million dollar eye shadow but that doesn’t mean I’m not cautious about what I use on my face.

When I first found the Alba Botanica coconut cream clear lip gloss, I was really interested to try it out. It’s not every day you come across a lip product that’s made with a relatively clean list of ingredients. I’m intrigued and I’m wondering how well it’ll work. Now, I’m not much of a lipstick gal. The most I’ll do is use lip balm or lip gloss so this Alba Botanica coconut cream clear lip gloss is ripe for a product test.

I’m lactose intolerant but I need calcium. My solution? Almond milk. I prefer it over some of my other options but I also eat yogurt and cheese. I prefer plain old almond milk and I’m okay if it’s sweetened. I prefer it over the unsweetened almond milk and I’m not a big fan of chocolate almond milk given that I’m also not a big fan of chocolate.

I also happen to be a coconut lover. I will almost always try something that has coconut in it at least once just to see how it tastes. Thus, when Almond Breeze came out with an almond coconut drink, I was intrigued and eager to try it.  After all, it’s lactose free and it’s soy free so it seemed like a no-brainer, right?  Yeah….about that….

I know you know I’m not a big fan of chocolate. Don’t know why, I’m just not that into chocolate but I do try some out now and again just to see if I might find one that I enjoy more others.

The other day, I was at the store and this Lindt Excellence Dark Coconut Bar caught my eye. Why? Well, the coconut of course! Now, to be honest, I’ve had Lindor Lindt chocolate before. I’ve always liked it but I rarely bought it. I’d get Lindor Lindt chocolate as a gift, I’d eat it, I’d enjoy it, and I’d buy it for others, but I’ve never really had the urge to buy it for myself. The addition of coconut was just the incentive I needed to try this Lindt Excellence Dark Coconut Bar.

Today is a much better day. Yesterday, not so much but you know, I’m staying positive and I’m moving forward. I’m trying to be a positive role model for my kid because really, life isn’t about wallowing. You just have to pick yourself up and keep moving forward.

You see, I’m not great at baking but I sure am comfortable making pancakes! So, with a not-so-great start to the week, why not try something new (okay, a little new). It’s gotten to the point now where I actually am confident enough in my pancake skills to try substitutions. For me, that’s a huge step forward. Usually, I just try to follow the cookbook instructions and aim not to fail miserably.

Today, I decided to use coconut flour in my pancake recipe. Until now, I’ve only seen coconut flour in my local health food store but I’ve never tried to take it home. Here’s the tricky thing about making your own spontaneous substitutions: I have no idea how much to use. I also don’t know what this coconut flour will do to my pancakes. They’ll either be a complete hit or a complete earth shattering disaster.

Now, you can see by the image I’ve included that these cute little coconut flour pancakes turned out quite well. They’re light and fluffy looking but how do these coconut flour pancakes taste and what proportions did I use?

Ever hear of Luna & Larry’s Organic Coconut Bliss Naked Coconut Bars? I never did until a recent trip to my local health food store. Like peanut butter, I can’t seem to resist anything with the word ‘coconut’ on the box. Like usual, I walk in the aisles, I peer into the freezer section and I spot the word ‘coconut’ and my eyes go ‘cha CHING’ and my brain says, “WHAT’S THAT?”

Read a little farther and seriously, these Luna & Larry’s Organic Coconut Bliss Naked Coconut Bars looked mighty promising. Given that warm weather is ahead, I’m looking for a yummy decadent ice cold coconut treat that isn’t too sweet and makes me yell ‘COCONUT!’ at the top of my lungs. I don’t have high expectations, really, I don’t. 🙂

Coconut water, coconut water, coconut water. It seems everywhere I turn, coconut water is being pushed in my face. There are claims that coconut water is healthy and whatnot but I myself have never tried it which is funny since I love eating coconut and using coconut milk. But coconut water? Never.

Lo and behold, I was at some store and needed a drink. Instead of grabbing the regular H2O that I would normally reach for, I grabbed a little tetra pack of the Coco Samba coconut water. It was on sale so I decided to buy it and try it. The package was small enough that if I didn’t like it, I wouldn’t feel like I had completely wasted my money. So, let’s just take a look and see what all this commotion about coconut water is all about.

I think the weather may be changing. I think it might just be getting warmer but I’m afraid of speaking too soon. Now, I don’t like hot, humid, and muggy weather, but I would certainly appreciate some nicer, warmer days just for a change of scenery, please and thank you.

A few posts ago, we reviewed the Natural Choice Strawberry Fruit Bars and at that time, I had promised that I would eventually get around to testing the other box of Natural Choice fruit bars that we had gotten. So, here it is: round 2 of our Natural Choice product testing. This time, we’re reviewing the Natural Choice Coconut Fruit bars. I’m biased towards coconut because I love the way it tastes so I’ve got high hopes for these bars. I dream of a decadently rich and coconut explosion that will make me dream of blue skies and white fluffy clouds. Okay, maybe that’s a bit much to ask for in a frozen box of treats but hey, fingers crossed, maybe just maybe….
