I know, I know, it’s been a long time but I’ve finally managed to get around to do some more baking and to actually share a recipe. These butter oatmeal cookies are super easy to make and only require a few simple ingredients. I mean, seriously, if I can make them, so can you! If you like crisp cookies that aren’t too sweet, these butter oatmeal cookies will be right up your alley!

Time to bake: ingredients needed for these butter oatmeal cookies

Here’s a quick list of the ingredients you’ll need for these butter oatmeal cookies:

¾ cup all purpose flour
1 cup rolled oats (not the instant stuff)
Pinch of salt
½ teaspoon baking soda
½ cup butter at room temperature
½ cup brown sugar (not packed)

First things first, combine the flour, oats, baking soda, and salt in one bowl. Leave it to the side.

In a separate bowl, beat the butter until fluffy. I prefer to have the butter at room temperature which makes it so much easier to whip up. I do it by hand since I’m too lazy to take out the mixer.

After that, add the brown sugar to the butter and give it a good whipping.

Add the dry ingredients to the wet mix and blend well. I prefer to use a spatula to do this. It takes a little elbow grease but before you know it, your cookie dough mix is nicely combined and we’re ready to rock.

Decide how big you want your cookies to be. Scoop out the cookie dough and flatten them into discs. They don’t really puff up on their own so unless you squish them flat you’ll get little lumps to eat.

The flatter you press them, the crisper they’ll get. I like to flatten mine with my measuring cup.

Bake the cookies at 350 degrees for about 10 minutes or less (or more, depending on your oven and your baking sheets). These cookies burn quickly so keep an eye on them. You’ll want to take them out when the edges start to turn golden.

These butter oatmeal cookies will crisp up even more as they start to cool.
