One of things I love about summer is seeing all the fresh fruits and vegetables; lemons, limes, oranges, strawberries, peppers, zucchini, and grapes with all their vibrant colours gleaming in the sunlight.
It’s the best feeling, ever.
While I may enjoy eating my fair of ‘junk’ food, my heart belongs with those fruit and veggies. Ask my daughter and hubby and they’ll tell you I’ll snatch all the veggies if they don’t eat them fast enough.
Some days I crave a good hummus with veggies. Other times, I’ll want clementines galore. Oh, how about an amazing green salad with fruits, nuts, and seeds topped with a good helping of tomatoes, cucumbers, and maybe some quinoa? Finish it off with a little olive oil and balsamic vinegar and it’s just divine.
Ooh…maybe with a bit of feta cheese?
Add a drizzle of honey?
You see, the options are endless.
Actually some fresh non GMO corn on the cob is pretty amazing too. Oh…so sweet and decadent.
Today’s post is a giant ‘thank you’ for all the farmers out there that make a difference in all our lives. I know the work isn’t easy and it most certainly is a labour of love. It relies on grit, determination, skill, and Mother Nature’s unknown will. As the summer slowly winds down I can’t help but wish it would last a little longer so I could have more days to bask in this kind of glory.
Things to do: take care of our planet. It’s ours and it’s our job to take care of it however way we can.
