Where do I even begin?

If you like lemons, you’ll like this lemon pudding cake. I honestly thought this would become a disaster in the oven but was happily surprised by the finished product. You get this lovely light layer of cake at the top with a yummy pudding like lemon curd on the bottom. It tastes great fresh but in my humble opinion it tastes so much better after it’s been chilled.

I’m a mediocre baker at best so if I can make this simple lemon pudding cake, so can you!

With the hot summer months came really hot muggy weather and I don’t know about you but I certainly didn’t feel like cooking in that kind of humidity.

The brain turned into mush and all I could think about was escape. My stomach however still wanted food so my brain had to quickly think of a decent alternative (because I’m also tired of take out).

AHA.

Brain blast.

Pasta salad!

I had tomatoes, cucumbers, feta cheese, quinoa, and pasta. It seemed like the perfect summer dinner. With a splash of balsamic vinegar and a few other choice ingredients (hello, olive oil), dinner was on the table and it was a HIT.

It’s times like these I’m reminded that ‘less is more’. I didn’t need a big giant gourmet meal. I didn’t need a lavish 12 course sampler. All I really wanted was a refreshing salad made with delicious simple ingredients. It took no time to throw together and even less time for the entire family to plow through without feeling gross and disgusting afterwards. I also didn’t have to spend gallons of money on this pasta salad (you know, take out costs more than you think!) and there was even enough for my lunch the next day.

I should have thought of this a lot sooner!

Now, I don’t really have a recipe to share because quite frankly, I just threw a bunch of stuff together and hoped for the best. Olive oil and balsamic vinegar definitely played a part and I may have added a pinch of salt and pepper to round out the flavours.

So, if you’re having a really hot and muggy summer try making your own pasta salad. Surprise yourself. Throw in some quinoa, maybe some barley or buckwheat, or add a few seeds into the mix. You may end up with the best tasting salad ever!

I go through phases where I’m ‘pro-chip’ and other times I’m ‘chip? What’s a chip?’ I generally prefer savory snacks over sweet ones and on this particular occasion I decided to pick up this bag of Boulder Canyon Avocado Oil Canyon Cut potato chips.

Why?

Oh, because they mentioned avocado oil and I was intrigued. Would potato chips cooked in avocado oil taste any different than the typical po-chip?

To the average person, this just looks like a delectable bag of goodies. For me, this bag represents love, care, consideration, and a whole lot of goodness.

You see, my family is fortunate enough to have really awesome neighbours. While we may live on the same street, we’ve also known each other for years and we’re really more like family at this point. There are random moments where I’ll get a phone call and there’s cake waiting on the other end. Other times, we’ll bring over treats just to spend a few moments and catch up on life. On this particular occasion, my ‘neighbours’ were given goodies and decided to make us a sample pack to enjoy.

It’s moments like these that I’m reminded of what’s important in life. Goodness knows, I need reminders like these because work is work and well, work is draining (need I say more?) and sometimes it can make you forget about all the beauty life has to offer. Random acts of kindness, people who care about you with no ulterior motive, those are the things to hold on to.
